12 Minute Tortellini Soup

The only word that comes to mind when I go to write a new post is “Brrrrrrrr”.  I know I keep talking about the cold weather, but seriously? It’s SO cold outside.

Which is why you need to make this soup ASAP.


It’s comforting, warming, delicious, healthy, and a cinch to make.

12 Minute Tortellini Soup

Makes 4 servings

*Note: when stirring the egg into the broth, it is important to vigorously whisk while slowly pouring the egg into the soup. The egg should incorporate into the broth and should give the broth an opaque color.

6 cups low sodium chicken broth

1-9oz package whole wheat tortellini (I used three cheese)

1 egg

1/2 cup parmesan cheese

2 cups spinach or kale

1. Bring chicken broth to a boil. Add tortellini and cook for about 8 minutes, until tender.

2. In a small bowl, whisk egg. Remove soup from heat and stir egg into the soup whisking constantly until the egg is well incorporated into the broth (see note). Add parmesan cheese and spinach or kale and mix until greens wilt. Serve and warm up 🙂
