How many servings of fruits and veggies can you get in before you walk out the door?

Maybe it’s because I am a yoga-practicing dietitian, but I play a game with myself to see how many servings of fruits and vegetables I can get in each day. I consider it a personal victory each time I break my own record.

Yogis love sitting around bragging about the number of super foods they have in their cupboard while us dietitians feel superior when we can announce to the world that we were able to pack 8 servings of fruits and vegetables into our day…and it’s not even lunch time yet!

While I tend to fall back into the same smoothie routine during the week, I try to change it up on the weekends.

This past weekend I whipped up this concoction.

Pair this baby with some oatmeal loaded up with berries and you can head to work or to the studio bragging that you were able to pack in your 5 a day before your day even started!

Green Grapefruit Smoothie

Makes about 2 cups

1 cup coconut water

1/4 grapefruit, peeled and seeds removed (about 1/2 cup)

1 cup cucumber, peeled and sliced

1 cup spinach

1 cup kale

4 frozen strawberries

1. Place all ingredients in a blender in the order listed. Turn blender on at low speed and quickly increase to high. Blend for 1-1 1/2 minutes until smooth.
