Game Day Guacamole

The best guacamole I’ve ever had is from our local farmer’s market. I am going through major withdrawal since the farmer’s market is closed for the season. After getting an intense craving for my favorite guacamole, I decided whip up my own. It got the job done but I still can’t wait for May to roll around and the farmer’s market to open again!

I like the taste of onion in guacamole but don’t like to bite into a large piece of it. I used an immersion blender to ensure a smooth consistency and no large pieces of onion.

People tend to shy away from guacamole because of it’s high calorie content. While it does have a lot of calories, think of where the calories come from. Avocados are a great source of omega-3 fatty acids (think heart healthy fat). Also, we usually associate guacamole with chips and margaritas. Who says you can’t enjoy guacamole with some fresh veggies and a green smoothie instead? While moderation is always key, don’t be afraid to indulge in a few spoonfuls of this power food.

This is the perfect heart healthy Superbowl snack.

Game Day Guacamole

3 ripe avocado

1/2 of a medium onion, roughly chopped

1/8 teaspoon garlic powder

1/16 teaspoon cumin

Edit: 3 tablespoons lime juice

Salt and pepper to taste

1. Cut the avocado in half using a sharp knife. Remove the pit but piercing it with a knife and gently twisting until he pit loosens. Spoon the avocado into a medium bowl. Add the onions, garlic powder, cumin, salt and pepper.

2. Using an immersion blender, blend the ingredients until smooth leaving a few large chunks of avocado unblended. Season with additional salt and pepper to taste.
